Raspberry Cordial

If I am going to drink something sweet, I like to know what’s in it and this four ingredient raspberry cordial is simplicity itself. You can use any berry but do be sure to adjust the sugar accordingly. By all means use a different way to sweeten it. I prefer to use caster sugar for this. Quite simply, I don’t trust faddy sweeteners.

This is so much more than a cordial. By all means freeze into ice cubes and add to still or fizzy water. A splash of this in the bottom of some champagne is to die for and you can use the pulp just like a fresh jam over rice pudding or on a freshly baked scone. There are almost endless possibilities for this beautiful drink and I will be making it with blackcurrants next!

 

Makes 750ml (Goes a very long way so don’t forget to dilute it)

 

Ingredients

  • 400g of raspberries (use any berry)
  • 200g caster sugar (depending on the acidity of the fruit you use, adjust to taste)
  • 250ml water
  • Juice of 1-2 lemons depending on how much juice they yield. Again it is important to taste as you go.

 

  1. Mix the berries, sugar and water in a saucepan and heat very gently, stirring often until it reaches a gentle simmer.
  2. Simmer for 3-5 minutes until fruit begins to break up and you can smell the raspberries
  3. Add your lemon juice and taste, if it needs a bit more then feel free to add it in. Remember though that as you taste it will be sweet and quite strong because you are going to dilute it so be sure to adjust the flavor to allow for this. You may decide more sugar is needed.
  4. Allow to simmer for 2-3 minutes once more and then turn off the pan and leave to cool.
  5. Strain through a sieve or muslin and pour into sterilized bottles or an ice cube tray.
  6. Enjoy however you please.
