Vegetable Mash

This is a great alternative to pure mashed potato as it can be used to add in extra portions of other vegetables. In this recipe I use carrots, but you could also add cauliflower, squash and other root vegetables such as parsnip or swede. The sour cream adds a deliciously creamy aspect and the mustard gives an amazing savory bite

 2 Medium Potatoes
 3 Large CArrots
 1 tbsp Colmans Mustard (or of your choice)
 150 ml Sour Cream

Peel and coarsely cut up potatoes and carrots

Place in steaming pan and steam until soft

Remove from steamer and add mustard and sour cream

Mash until smooth and season to taste. Give it all a final mix together before serving
