Tofu and Vegetable Chow Mein

A really quick and easy take on the oriental classic chow mein, loaded with vegetables and using tofu as protein instead of meat or seafood. You can of course vary the protein, and mix up your stir-fry vegetable choice too!

 1 Carrot (sliced)
 1 Handful Cabbage (sliced)
 1 Handful Broccoli (chopped)
 2 Large Garlic Cloves (crushed)
 1 tbsp Grated Ginger
 3 tbsp Light Soy Sauce
 4 tbsp Oyster Sauce
 2 tbsp Sesame Oil
 250 g Tofu (diced)
 120 g Whole Wheat Egg Noodles

Prepare all vegetables as needed

Mix together crushed garlic, grated ginger, 2 tbsp light soy sauce and oyster sauce and set aside

Cube tofu and stir-fry in sesame oil and 1 tbsp of light soy sauce. Keep tofu moving and stir-fry until all sides have developed a light crispy surface

In a separate pan boil some water and cook noodles as their instructions specify (once cooked you can rinse then in cold water and toss in sesame oil to stop them sticking together)

Add prepared vegetables to tofu pan and stir fry until cooked but still al dente

Mix together noodles and sauce from step 2 with vegetable and tofu, and stir-fry until all is thoroughly combined and hot. Ready to go!
