A great winter warmer this one, enhanced with the use of extra garlicy sausages and top quality stock. Serve with greens and vegetable mash or polenta. A one of a kind comfort meal!
Coarsely chop all the vegetables and snip sausages into good sized chunks
In a good sized pan fry off sausages with a little olive oil until browned
Remove sausages and fry off vegetable in sausage pan for 2-3 minutes
Add garlic, rosemary, bay and browned sausages, cooking for a further 2-3 minutes
Add stock, bring to the boil, and simmer for 20-30 minutes
Serve with vegetable mash (recipe in archive) and greens
