Pea Guacamole

Guacamole is a classic accompaniment to many Mexican meals or a great topping for toast or snack with crackers. This is a great way to add a vegetable component and create a deliciously balanced version. The peas at bulk, protein and give you a green vegetable too! Makes it more filling and for longer.

 1 Good Sized Avocado
 1 cup Peas
 1 Clove of Garlic (chopped)
 1 tsp Chilli Flakes
 1 tsp Lime Juice
 2 Spring Onions
 1 tsp Olive Oil
 Small Handful Chopped Coriander
 Salt and Pepper (to taste)

Open avocado and scoop into blender

Add garlic, chilli flakes, peas, lime juice, spring onions and half the coriander to blender and blend

Add more lime juice and olive oil and desired, season and give a final mix

Put in a bowl, sprinkle with the remaining coriander and enjoy! Serving size based on eating as a dip-snack
