These are a deliciously nutty variation on the classic flapjack recipe. A perfect healthy sweet treat to calm those mid-afternoon sugar cravings. Goes wonderfully well with a cup of tea!
Preheat oven to 150C
Heat coconut oil in a pan and add dates and honey. Cook briefly and add vanilla extract
Allow to cool, transfer into a bowl, and then blend until dates are smooth. You don’t have to worry about coconut oil not combining fully
Add oats, seeds and nuts and mix thoroughly
Line a baking tray with baking paper and press mixture firmly into it
Bake in oven for 12-15 mins. The longer the bake, the crispier the flapjacks are
Remove from oven, allow to cool slightly then cut into squares and enjoy! Serving size depends on the size you cut them into!!
