This is a great way to add some extra leafy greens to classic pesto recipes by simply replacing some of the basil used with kale. You could also substitute in spinach or rocket for a similar result. Rocket will add a delicious spicy bite to the end product. Pesto is extremely versatile and can be used as a pasta sauce or a marinade to bake fish or meat with.
Add garlic, olive oil, lemon juice and a splash of water to a blender and blend
Add Kale to blender and blend, adding extra water if needed
Add basil to blender and blend
Add parmesan and walnuts to blender. Season to taste and blend, adding extra water if needed
Put in jar and refrigerate. Will keep for up to a week. Serving size is based on a portion when added as dressing or pasta meal ingredient
