This is a delicious way to change up a plain chicken breast into something hearty and satisfying. It is a great protein to serve a whole host of sides with, from vegetable mash and greens to roasted root vegetables or rice dishes.
Preheat Oven to 180C
Mix together spinach and ricotta (and crushed garlic if desired). Season and add smoked paprika
Deeply score the chicken breast with a sharp knife, about 1 cm apart
Stuff scores with spinach/ricotta mix and smear over breast surface
Place in baking tray and grate over some parmesan cheese
Bake for 20 mins (depending on size of chicken breast) and serve!
