This is such a beautiful salad that is made special by the mirin dressing. Mirin has a sweetness that really lifts the dish and you can find it in most supermarkets. This salad goes well with any protein pretty much. I like to serve it with miso salmon but it goes will with chicken, beef or pork!
Mix grated ginger, chilli flakes, sesame oil and rice wine vinegar together in a bowl and set aside
Peel and smash the cucumber using the side of your knife or rolling pin, take out the seeds and cut into half moon shaped chunks
Cook noodles according to their instructions
Mix cucumber, sliced red cabbage and noodles together. Pour over dressing
Serve with Miso Salmon (recipe is in archive) or protein of choice. A sprinkle of sesame seeds works well here
