Easy Egg Avocadonnaise

This easy egg avocadonnaise is a healthy twist on the classic egg-mayonnaise. One of the best breakfast or post-workout treats I have in my fitness arsenal. It is so simple and easy to make and really packs a nutritional punch. Loaded with healthy fats this is a great source of omegas. This is also wonderful for picnics!

 

Serves 1

  • 1 hard boiled egg
  • ½ a medium, ripe avocado
  • 1 spring onion
  • Salt and pepper to taste
  • 1 slice of sprouted grain bread or any vehicle you wish to serve it on!

 

  1. Put your egg on to boil
  2. Meanwhile, mash up your avocado using the back of a fork with a little salt and pepper
  3. Chop your spring onion. I like to keep it a little chunky
  4. Mix spring onion with avocado mixture
  5. When egg is done, dice it. Not too fine because it breaks up further when you mix it with avocado
  6. Stir egg in with avocado and spring onion
  7. Spread on toast or enjoy with sticks of celery and carrot
